Baked Chicken



(My mother notes for this recipe) This is delicious. Tastes like fried chicken. The gravy is good with rice or potatoes. May have to add extra water to make gravy after the chicken is removed.

Cut one or two fryers into serving pieces. Put large piece of foil into the pan. Sprinkle 1/2 package of dry onion soup on foil, then place the chicken on top of the onion soup & sprinkle remaining soup on chicken. Pour small can of evaporated milk on chicken. Cover with foil. Bake at 425 for one hour.

Easy Beef Stew




I thought my first recipe ought to be weather appropriate. ;)  I make this stew all the time and the kids just love it! What I love about these recipes is that you can add whatever you want to them. Makes it easy to adjust to your family's taste buds.

1 lb cubed beef, chuck or bottom round
2 tbsp oil
1 can (15 oz) spaghetti sauce with meat
2 cans of water (using spaghetti can)
1 green pepper
2 stalks of celery, sliced
2 medium potatoes, cubed
1 can (1lb) whole or sliced baby carrots
1 can (1lb) whole white onions
salt & pepper

In electric frying pan or skillet, brown meat in oil. Pour off excess oil. Add spaghetti sauce and water, simmer for two hours or until meat is tender. Add celery, potatoes, and green peppers, cook 20 minutes longer. Add onions and carrots then salt and pepper to taste, cook another 10 minutes.
